Jerk Chicken Quesadillas

A flavorful fusion dish combining spicy Jamaican jerk chicken breast with cheesy, crispy quesadillas.

Ingredients

For the chicken

  • 2 whole chicken breast
  • 2 tsp chilli powder
  • 1 tbsp garlic powder
  • 1 tsp cumin
  • 1 tsp maggie chicken seasoning
  • 1 tsp maggie all purpose seasoning
  • 1 tsp smoked paprika
  • 1 tbsp jerk seasoning marinade (spicy)

Other Ingredients

  • 1 tbsp olive oil
  • 1 cup Mexican four cheese
  • 1 cup Mozzarella cheese
  • 1 small onion (sliced)
  • 1 cup bell peppers (any color, sliced)
  • 3 tbsp unsalted butter (melted)

Instructions

  • Wash the chicken breast with vinegar and lime, pat dry.
  • Chop into small 1 inch cubes.
  • Season with chili powder, cumin, garlic powder, all purpose, chicken seasoning, smoked paprika and jerk seasoning.
  • Drizzle olive oil, rub well and allow to marinate. Best if overnight, if not 30 minutes is fine.
  • Sautee bell peppers and onions in olive oil for about 3-5 minutes on medium heat.
  • Once the onion is transparent, add the chicken breast to the pan.
  • Cook the chicken until fully cooked. Then remove the chicken and pepper mixture from the pan.
  • In another pan, place your homemade tortilla down on low-medium heat. Brush on 1 coat of unsalted butter on the top half of the tortilla.
  • Add the chicken and pepper mixture onto one half of the tortilla, top that half with cheese and then fold the other half over to close the tortilla.
  • Once folded, I like to brush the other side with a bit of butter as well, this is optional. Cook until golden and cheese is melted.
  • Sprinkle cilantro for garnish, serve with homemade guac.
