Wash the chicken breast with vinegar and lime, pat dry.
Chop into small 1 inch cubes.
Season with chili powder, cumin, garlic powder, all purpose, chicken seasoning, smoked paprika and jerk seasoning.
Drizzle olive oil, rub well and allow to marinate. Best if overnight, if not 30 minutes is fine.
Sautee bell peppers and onions in olive oil for about 3-5 minutes on medium heat.
Once the onion is transparent, add the chicken breast to the pan.
Cook the chicken until fully cooked. Then remove the chicken and pepper mixture from the pan.
In another pan, place your homemade tortilla down on low-medium heat. Brush on 1 coat of unsalted butter on the top half of the tortilla. Add the chicken and pepper mixture onto one half of the tortilla, top that half with cheese and then fold the other half over to close the tortilla.
Once folded, I like to brush the other side with a bit of butter as well, this is optional. Cook until golden and cheese is melted.
Sprinkle cilantro for garnish, serve with homemade guac.
