- 2 whole chicken breasts

- 1 tablespoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon Maggi chicken seasoning
- 1 teaspoon Maggi all-purpose seasoning

- 1 cup mozzarella cheese

Instructions
- Wash chicken breasts with vinegar and lime, then pat dry.
- Chop chicken into 1-inch cubes.
- Season with chili powder, cumin, garlic powder, chicken seasoning, all-purpose seasoning, smoked paprika, and jerk seasoning.
- Drizzle with olive oil, rub well, and allow to marinate. Overnight is best, but 30 minutes works.
- Heat olive oil in a pan over medium heat. Sauté onions and bell peppers for 3–5 minutes until softened.

- Remove the chicken and pepper mixture from the pan and set aside.
- In a separate pan, place a tortilla over low-medium heat. Brush the top half lightly with melted butter.
- Add the chicken mixture to one half of the tortilla, top with cheese, and fold over.

- 1 tbsp olive oil
- 1 cup Mexican four cheese
- 1 cup Mozzarella cheese
- 1 small onion (sliced)
- 1 cup bell peppers (any color, sliced)
- 3 tbsp unsalted butter (melted)
Instructions

- Drizzle olive oil, rub well and allow to marinate. Best if overnight, if not 30 minutes is fine.
- Sautee bell peppers and onions in olive oil for about 3-5 minutes on medium heat.
- Once the onion is transparent, add the chicken breast to the pan.
- Cook the chicken until fully cooked. Then remove the chicken and pepper mixture from the pan.
- In another pan, place your homemade tortilla down on low-medium heat. Brush on 1 coat of unsalted butter on the top half of the tortilla.
- Add the chicken and pepper mixture onto one half of the tortilla, top that half with cheese and then fold the other half over to close the tortilla.
- Once folded, I like to brush the other side with a bit of butter as well, this is optional. Cook until golden and cheese is melted.
- Sprinkle cilantro for garnish, serve with homemade guac.
