Blueberry Hibiscus Lemonade (Naturally Sweetened, Summer-Ready!)

Ingredients

Hibiscus Syrup

  • 1/2 cup hibiscus
  • 1 cup water
  • 3/4 cup monk fruit

Blueberry Mix

  • 1 cup water
  • 1 cup blueberries

Unsweetened lemonade

  • 1 1/2 lemons juice freshly squeezed
  • 2 cups water

Instructions

  • Combine water and monk fruit in a sauce pan and stir until the sugar is dissolved (on medium heat).
  • Add in the fried hibiscus flowers and bring to a boil.
  • Reduce heat and simmer. Pour into a bowl/cup and set aside.
  • Rinse the sauce pan. In that same saucepan bring blueberries and water to a boil to create the blueberry mix.
  • Pour the mixture into a small bowl, smash the berries to get all the juices out.
  • Strain the mix into a cup and cool.
  • In a separate cup, combine the lemon juice and water to create an unsweetened lemonade.
  • Once everything has cooled, pour ice into an empty cup. Then pour the unsweetened lemonade, then the blueberry mix followed by the hibiscus syrup.
  • Add mint leaf, and lemon for garnish. Enjoy!
